This rural dish is a real feast on a cold rainy day. "Originally called Bangers and mash" we pimped it with typical "Irish champ" instead of mash. (roughly mashed potatoes, enhanced with some cream, a nub of Irish Kerrygold butter, a pinch of garlic and finely chopped scallions.
The bangers are Irish Clonakilty sausages of course.
They come with caramelized red onion gravy & cranberry chutney.
Some green gardenpeas and crispy fried sage wil chaperone your dish.
Cooking instructions.
Oven
- Preheat the oven to 180°C
- take the lid off the tray. The tray can go in the oven
- cover the top with some silverfoil
- poke some holes in the foil
- heat up for 15-20 min.
Microwave
Cover the tray with some cling film and heat it up for 3 to 4 minutes
